Turbot with Plantain and Passionfruit Sauce


This dish was inspired by Chef Angelo’s time spent in Africa and the Carribean. Plantains are a “resistant starch” and therefore great for supporting a healthy gut and stable blood sugar.  Amaranth leaves are rich in iron, magnesium and vitamin E.

  • 2 passion fruits
  • Garlic
  • Lime
  • Honey
  • Amaranth leaves, kale or swiss chard
  • 2 plantains
  • Banana leaves

What you will need:

  • Coconut Oil
  • White pepper
