There is a very famous soup in Ecuador called locro de papas, it’s very common in the highlands. It uses papa chola which is a kind of potato that is very starchy. The soup has milk, cheese, onions and avocado among other ingredients. Chef Alejandra wanted to bring a fresh more nutritional recipe that would be equally as delicious but less heavy.
