Mushrooms are extremely versatile. Oyster mushrooms are a great plant-based substitute for scallops because they have a similar shape and texture. While Enoki Mushrooms have a soft, delicate texture that is reminiscent of angel hair pasta. Miso paste not only adds an earthy, umami flavor but is full of beneficial bacteria.
