Japchae is a staple of Korean cuisine. This savory and slightly sweet stir-fry utilizes low-glycemic glass noodles made froms sweet potato starch. Wood Ear Mushrooms help regulate blood sugar, increase circulation and are rich in copper and selenium, while Shiitake Mushrooms are rich in Vit-D, manganese, iron, zinc, and therefore contain immune boosting benefits. Sweet potato noodles are a naturally gluten free, resistant starch, which is great for microbiome (i.e. gut) health.
