Homemade Vegan Kimchi


Kimchi is made by lacto-fermentation, the same process that creates sauerkraut and pickles, and is rich in probiotics.  Consuming probiotics in kimchi can help you maintain healthy digestion, reduce inflammation and support a healthy immune system.

Cook Time: 25 Minutes (3-5 days fermentation)

Serves: 8-10

What you get:

  • 1 Small Head of Napa or Regular Cabbage
  • 1 Daikon Radish
  • 3 Fresh Cayenne Peppers
  • 1 Red Bell Pepper
  • 1 Knob of Ginger
  • 3 Garlic Cloves
  • 2 Bunch of Scallions
  • 1 Green Apple

What you need:

  • Food Processor¬†
  • 2 Quart Glass Jars with Lids (Note: Best with an opening large enough to put a fist in)
  • Vegetable Peeler
  • Sea Salt (or fish sauce if not vegan)
