  • 1 Yellow Onion
  • 1 Red Bell Pepper
  • 3 Cloves of Garlic
  • 1 Can Tomato Paste
  • 1 Can (28 oz) Crushed Tomatoes (preferably fire-roasted)
  • Bundle of Fresh Cilantro or Flat-leaf Parsley
  • 6 Large Eggs
  • Crusty Bread or Whole Grain Pita (optional)

  • Ground Cumin
  • Smoked Paprika
